PB2 peanut butter cookies have a fraction of the fat, sugar and calories in regular peanut butter cookies! Peanut buttery goodness, sans regret!
Ingredients
- 1/2 c unsweetened applesauce
- 1 tsp vanilla
- 1 mashed banana or 1 Tbs flax meal mixed with 3 Tbs warm water
- scant 1/4 tsp salt
- 1/3 c brown sugar
- 1 1/4 c PB2
Instructions
- Heat oven to 350.
- Line a cookie sheet with a baking mat or parchment paper sprayed with nonstick.
- Combine everything except the PB2 in a food processor or a large mixing bowl.
- Add the PB2 and mix well.
- Drop the cookies onto the sheet, about 2 Tbs per cookie, and pattern the tops or leave plain as you like.
- Bake 12 minutes, or when lightly browned on the bottom.
- Cool completely on the baking sheets.
