Take it easy with these no bake raw fudge brownie bites. Portable deliciousness, just 4 healthy ingredients, almost zero effort! Vegan, gluten free, no refined sugar.
- 1 cup plain unsalted roasted peanuts
- 1 1/2 cup pitted Medjool dates (about 15 dates)
- 1/4 cup + 2 Tbs cocoa powder
- 1/2 c dairy-free chocolate chips
- Combine the ingredients in a food processor.
- Pulse for a few minutes until smooth.
- Roll into 14 or 15 balls.
- Roll each ball around in cocoa power. Tap off any extra cocoa.
- Store in an airtight container up to two weeks.
