Homemade Pumpkin Butter

INGREDIENTS
1 29 oz. can pumpkin puree
1 c. apple juice or apple cider
½ c. granulated sugar
¼ c. honey
2 tsp. cinnamon
2 tsp. lemon juice
1 tsp. ground ginger
¾ tsp. ground nutmeg

INSTRUCTIONS

  1. Combine all ingredients in a large saucepan.
  2. Bring to a boil over medium-high heat, stirring constantly.
  3. Reduce heat to medium-low; simmer 10-15 minutes, stirring regularly. Mixture will become more smooth as it is heated and stirred.
  4. *For a thicker consistency, continue heating and stirring over medium-low heat for an additional 10-15 minutes.
