Breakfast is the most important meal of the day. So it is important we enjoy every bite of it. What better way to start the day than eating your favorite pancakes, right? What caught my attention and what made me decide to give this recipe a try is a fact that it has pumpkin in it. I mean, how awesome is that? My kids love pancakes so I made sure that not only did they eat what they like but also it has to be healthy as well. It has a unique taste that you will not find on other recipes of pancakes. It is sweet and mushy. I love how the pumpkin compliments well with the rest of the ingredients. Give this a try and thank me later. Enjoy!
Ingredients:
- 1 ¼ cups all-purpose flour
- ¼ cup white sugar
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 cup milk
- ½ cup pumpkin puree
- 1 egg, beaten
- 1 tablespoon vegetable oil
Directions:
Step 1: In a medium mixing bowl, sift in the baking powder, flour, sugar, nutmeg, and cinnamon.
Step 2: In another medium mixing bowl, add in the egg, pumpkin, oil, and milk. Whisk until well mixed.
Step 3: Transfer the liquid mixture into the flour mixture and stir until well mixed. The batter should be soft and moist.
Step 4: Heat the griddle to medium-high 350 degrees F. Add a little oil and allow it to heat through.
Step 5: Use a spoon to drop the batter into the hot griddle. Cook for 1 to 3 minutes or until the edges are dry and until it starts to bubble.
Step 6: Flip and cook the other side the same way. Repeat the procedure until all the batter is cooked.
Step 7: Place the pancakes on a clean plate and top it with butter.
