Brown Butter Scallops with Bacon, Corn, Avocado


  • 4 strips bacon, chopped
  • 4 ears corn, kernels removed
  • ½ cup fresh basil, chopped
  • juice from 1 lemon
  • kosher salt and pepper
  • 1 pound large scallops (seasoned with salt, pepper, paprika)
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, smashed
  • 1 pinch crushed red pepper flakes
  • 3 tablespoons butter
  • ¼ cup dry white wine
  • 2 avocados, sliced


  1. Place cold bacon in cast iron skillet and turn on heat.
  2. Cook till crispy, remove and drain.
  3. Add corn to the bacon grease and let it brown about 5 mins.
  4. Add 1 tablespoon butter and cook 5 more mins.
  5. Take skillet off the heat and add basil, lemon juice and a pinch of salt/pepper.
  6. Remove corn to a platter and wipe the pan clean.
  7. Heat olive oil in skillet and once hot sear the scallops on both sides.
  8. Add 2 T. butter, garlic, red pepper and cook 3 mins to brown butter.
  9. Add wine and simmer 5 mins.
  10. Spoon this all on top of the corn.
  11. Garnish with the bacon and avocado.
