Ingredients:
CINNAMON SUGAR TORTILLA SHELLS
6 Large Flour tortillas
½ c Brown sugar
1½ tsp Cinnamon
Oil for frying
CREAM CHEESE FILLING
8 ounces Cream cheese
1 c Heavy cream
¼ c Powdered sugar
1 tsp Vanilla extract
HOMEMADE APPLE PIE FILLING
2 large Apples, diced
½ teaspoon cinnamon
⅛ c cornstarch
⅓ c brown sugar
1 c water
⅛ teaspoon nutmeg
½ teaspoon vanilla extract
Directions:
In a mixing bowl, add the sugar and cinnamon. Stir until well combined.
Use a circle cutter to slice the tortillas.
Place a pan on the stove and turn the heat to medium.
Add 1-inch of oil and allow it to become hot.
Add the round tortillas and fry each for about 15 seconds or until they turn golden brown.
Remove the tacos from the skillet onto a clean plate lined with paper towels to drain any excess oil.
Put them into the bowl with the sugar mixture and toss until well coated.
Put each into a muffin tin. Repeat the process to the rest.
For the Homemade Apple Pie Filling:
Add water, brown sugar, cornstarch, nutmeg, and cinnamon into a pan. Stir until well mixed.
Place it over the stove and turn the heat to medium. Cook for 3 minutes or until the texture becomes thick.
Add the vanilla extract and apples. Stir and cook for about 10 minutes.
Remove the pan from the heat and allow it to cool completely.
For the Cheesecake Filling:
In a medium mixing bowl, add heavy cream, cream cheese, vanilla extract, and powdered sugar. Stir until well mixed.
Transfer the mixture into a piping bag.
Fill each shell with it and top with the apple pie filling.
