Ingredients:
2 lbs lean ground turkey or shredded chicken
1 onion chopped
4 cloves garlic minced or pressed
1 red bell pepper seeded and chopped
1 yellow bell pepper seeded and chopped
8 oz. baby bella “crimini” mushrooms sliced
1 14 oz can of diced tomatoes
1 32 oz can of reduced-sodium tomato juice
1 Tbs. fresh lemon juice
1 14 oz can black beans drained and rinsed
1 Tbs. ground cumin
1/4 tsp. cayenne or to taste
1/2 cup each fresh cilantro chopped
1/4 cup parsley chopped
Instructions:
In a large pot, brown ground turkey or cook chopped chicken. Once the meat protein is cooked, drain the fat if there is any.
Prepare your fresh vegetables by chopping the onion, mincing the garlic, seeding and chopping the bell peppers, and slicing the mushrooms.
Add in onion, garlic, peppers, and mushrooms and cook until soft, about 5 minutes.
Stir in the remaining ingredients, except cilantro and parsley. Cover and simmer for 15 minutes.
Stir in cilantro and parsley. Since cilantro and parsley can lose their flavor quickly when boiled or simmered add them last. By adding fresh herbs like these last you will add freshness and color to your soup.
