TaterChristmas Fruitcake Tot Casserole

I realize many people feel strongly one way or the other about fruitcake and I just started eating them myself last year-even though I have been making my Mom’s recipe since she passed in 1994. Many people who love these cakes get as my Christmas present to them.
Fruitcake

Ingredients :

  • 1 1/2 lbs Fruitcake Mix
  • 1 1/2 lbs Cherries
  • 1 1/2 lbs Pineapple
  • 2 lbs Nuts (pecans & walnuts)
  • 1 lbs Raisins
  • 1/2 c FlourToss together with flour to coat
  • 2 c shortening (I use butter)
  • 4 c packed brown sugar (2lb bag)
  • 8 lg eggs
  • 1 c grape juice
  • 1 c grape jelly
  • 5 1/2 c flour-suggest a soft winter wheat flour (like White Lily)
  • 2 t baking powder
  • 2 t salt
  • 1 t cinnamon
  • 5 t pumpkin pie spice

Directions :

  1. Cream together shortening and sugar.
  2. Add eggs 2  a time mixing well
  3. Combine grape juice and jelly
  4. Add dry ingredients (flour etc) and juice alternately
  5. Add to fruit and nuts mix well
  6. Bake at 250* for 2-4 hour
