Taco Tortilla Pizzas Recipe

Leftover taco mixture (ground turkey, refried beans, taco sauce, and seasoning)
2 burrito-sized flour tortillas
Shredded cheese of your choice (cheddar, Monterey Jack, or Mexican blend)
Pickled cherry peppers or other toppings of your choice
Olive oil (for brushing)

1. Prepare the Taco Mixture (if not already made):

If you don’t have leftover taco mixture, quickly prepare it by cooking ground turkey with taco seasoning, adding refried beans and taco sauce to create a seasoned and flavorful filling.
2. Preheat the Oven:

Preheat your oven to 375°F (190°C).
3. Assemble the Taco Tortilla Pizzas:

Place two burrito-sized flour tortillas on a baking sheet.
Spread a generous amount of the leftover taco mixture evenly over each tortilla, leaving a small border around the edges for the crust.
Sprinkle shredded cheese over the taco mixture. Use as much or as little cheese as you prefer.
4. Add Toppings:

Add pickled cherry peppers or other toppings of your choice. You can also customize each pizza with different toppings to suit everyone’s taste.
5. Brush with Olive Oil:

Lightly brush the outer edges of the tortillas with olive oil. This will help the crust turn golden and crispy.
6. Bake:

Place the baking sheet with the assembled tortilla pizzas in the preheated oven.
Bake for approximately 10-15 minutes or until the tortillas are crispy, and the cheese is melted and bubbly.
7. Serve:

Carefully remove the taco tortilla pizzas from the oven.
Slice them into wedges or squares.
