STUFFED BAKED MUSSELS (BAKED TAHONG)

The combination of potatoes and onions is insanely delicious! Pan fried to perfection for a few minutes, the result is amazing! With simple ingredients, this dish is something to look forward to in every meal! I highly suggest serving this with any fried meat such as chicken, pork, and beef! Ingredients:

4 tablespoons butter
2 cloves garlic, minced
1 1/2 pounds Yukon gold potatoes, peeled and sliced to 3/8-inch to 1/2-inch-thick slabs
2 tablespoons fresh chopped parsley
salt and pepper
2 medium yellow onions, sliced thinly, lengthwise

Directions:

Place a large skillet on the stove and turn the heat to medium. Add butter and allow it to melt.

Add the potatoes to the hot skillet and arrange them in a single layer. Season them with salt and pepper.

Cook the potatoes for a few minutes on each side or until they turn brown.

Reduce the heat to low, then add the onion slices and cook for a few more minutes until translucent. Season with a bit of salt.

Add the minced garlic, then sauté for about a minute or until aromatic. Remove the skillet from the heat.

Sprinkle freshly chopped parsley on top to garnish.

Serve right away. Enjoy!

Notes:

Make sure to cook the potatoes to about 350 degrees F to avoid the butter from toasting. I like to use an instant-read thermometer to check the temperature of the potatoes.

Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes before serving again.
