A complete meal in one-pot full of lemon flavour and loads of luscious garlic. Bone-in chicken thighs, potatoes, and veggies cooked right in the crockpot, no side dish required, surely a no-fuss.
INGREDIENTS
1 red onion
6-8 chicken thighs
1-1.5 pounds baby potatoes
1 lemon
2 tablespoons olive oil
2 tablespoons honey
4 cloves garlic
1/2 tablespoon fresh thyme leaves
sea salt
pepper
bunch thin green asparagus
HOW TO MAKE SLOW-COOKER LEMON CHICKEN
Step 1: Peel the red onion, slice, then add a single layer to the bottom of the slow cooker.
Step 2: On top of the onion slices, add the chicken thighs.
Step 3: Wash the baby potatoes, slice each in half, then add to the slow cooker.
Step 4: Combine the zest and juice of 1 lemon, olive oil, honey, thyme, sea salt, pepper, and finely chopped garlic in a small bowl. Pour this over the baby potatoes.
Step 5: Cove with the lid, seal, and cook for 3 to 4 hours on high or 6 to 8 hours on low.
Step 6: About 15 to 20 minutes before the end of cooking time, set the slow cooker to high, then add in the asparagus. Cover and continue cooking. Note that the cooking time depends on how thick the asparagus.
Step 7: This step is optional but recommended: take the chicken out of the slow cooker and onto a baking sheet in the last 5 minutes of cooking time. Broil for about 3 to 5 minutes on high until the skin is golden.
Step 8: Serve and enjoy!
