Slow Cooker Beef Pot Roast

Ingredients

  • 4 lbs chuck beef roast
  • 4 tbsp olive oil
  • 2 C beef broth
  • 1 pkg french onion mix
  • 1 yellow onion, chopped
  • 1 lb baby carrots
  • 1 lb baby red potatoes- quartered

Instructions

  1. Pour 2 tbsp olive oil into the IP and turn on to “saute”
  2. When oil becomes hot, add the roast and sear 5 minutes on each side.
  3. Add the beef broth into the IPUsing a ziplock bag, combine the carrots, onion, potatoes, onion mix, and olive oil and shake until veggies are coated
  4. Evenly distribute the veggies in the IP around the meat
  5. Close your lid and make sure the steam valve is closed
  6. Using manual settings, set the time to 70 minutes on high pressure
  7. When the clock timer goes off, do a natural release for 10 minutes then a quick release
  8. Once the steam goes away, remove the lid and carefully remove the roast
  9. Shred the roast and serve with the veggies
  10. Enjoy!
