Ingredients

- Sea salt and black pepper, to season
- 3 tablespoons butter
- 2 garlic cloves, minced
- 3 tablespoons olive oil, divided
- 4 sprigs fresh thyme
- 9 ounces white mushrooms, sliced
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat the oven to 420F
- Wash and pat rib dry with a paper towel.
- Place the rib in a baking dish large enough for when you add the mushrooms.
- Season generously with salt and pepper to taste.
- Rub with butter, garlic, 2 tablespoons olive oil and thyme. Put thyme also under the beef.
- Place in the oven and bake for 35 minutes.
- Remove the rib from the baking dish. Add mushrooms, 1 tablespoon olive oil and Worcestershire sauce in the juice. Stir and push on edges. Place the rib back in the middle.
- Bake all together for another 35 minutes by basting from time to time.
- Serve immediately with mashed potatoes.
