I love to cook but with my busy schedule, I almost find it hard to stay in the kitchen for too long. This is the reason why I love one-pot recipes. They are the best and so easy to throw together. This andouille sausage skillet pasta is indeed a one-pot wonder. It has the perfect texture and is very comforting with a little bit of cheese on top.
INGREDIENTS
1 (12.8-oz.) package smoked andouille sausage, thinly sliced
1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
2 c. chicken broth
1/2 c. milk
8 oz. elbow macaroni
1 (14.5-oz.) can diced tomatoes
1 c. shredded pepper jack cheese
Kosher salt and freshly ground black pepper, to taste
HOW TO MAKE ONE-POT ANDOUILLE SAUSAGE SKILLET PASTA
Step 1: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the garlic to the skillet along with the onion and sausage. Cook for about 3 to 4 minutes, stirring often until the sausage is lightly browned.
Step 2: Then, pour in the chicken broth and add the tomatoes, milk, and pasta. To taste, season with salt and pepper. Stir well and bring to a boil.
Step 3: Decrease the heat, put the lid on, and simmer for additional 12 to 14 minutes or until the pasta is completely cooked.
Step 4: Take off the heat when done and top with cheese. Replace the lid and let the cheese melt for approximately 2 minutes.
Step 5: Serve the andouille sausage skillet pasta right away. Enjoy!
