Marinated, Cucumbers, Onions, & Tomatoes

Marinated Cucumber, Tomato, and Onion Salad is the ideal summer serving of mixed greens. It’s both sweet and tart and the new freshness of the cucumbers and onions can’t be beat.

This late spring serving of mixed greens is a basic combination of oil, vinegar, sugar, salt and pepper alongside cut cucumbers, tomatoes, and onions. I love to serve it outrageously cold and will frequently add ice solid shapes to it not long prior to serving. So reviving on a blistering summer day!

Her’s was in every case great, however when I planned to make it, I was unable to recall what precisely went in to it. She was away on a meeting for work, so I was unable to connect with her. It was by incredibly good karma that I discovered this formula on Spend With Pennies, and kid am I happy that I did!

Ingredient 

  • 1 c of water
  • 1/2 c apple cider vinegar
  • 1/4 c oil vegetable
  • 1/4 c sugar
  • 1 tsp of salt
  • 1/2 tsp coarsely black pepper
  • 2 cucumbers, sliced
  • 3 tomatoes, cut to wedges
  • 1 onion, cut to rings

method of preparation 

  1. In a large bowl, combine the water, vinegar, vegetable oil, sugar, salt and pepper.
  2. Add the cucumbers, tomatoes and onion and toss to coat well.
  3. Refrigerate at least 2 hours. It will be kept for 3 to 5 days.
  4. I like to add ice cubes to the bowl just before serving. Cucumbers taste great when they’re very cold.
  5. Enjoy !
