LEMON POUND CAKE COOKIES

Ingredients

  • ¾ cup white sugar
  • ⅔ cup salted sweet cream butter, softened
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • (2) large eggs
  • 2 tsp lemon extract

Instructions

  1. Preheat oven 400 degrees F (200 degrees C).
  2. Cream sugar and butter in a bowl using an electric mixer until light and fluffy.
  3. Add and whisk flour and baking powder in a separate bowl, then gradually beat into creamed butter mixture until just combined.
  4. Beat eggs, one at a time, into butter-flour mixture until dough is thoroughly mixed and then stir in lemon extract.
  5. Then drop small scoops of dough onto a baking sheet.
  6. Bake until cookies spring back when touched for 10 to 12 minutes in the preheated oven.
