Hawaiian Banana Bread


1/2 c soft butter

1 c sugar

2 eggs

1 very ripe banana, crushed

8 oz crushed pineapple (do not drain)

2 c flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 c grated coconut


Preheat oven to 350 degrees. In a large bowl, beat the butter and sugar with a mixer until the mixture is light and fluffy. Adding eggs, one at a time also beat to incorporate.

Stirring in banana purée also pineapple.

In a separate bowl, sift the flour, baking powder, baking soda also salt. Adding to wet ingredients.

Stirring in coconut flakes/shreds.

Pour the mixture into a greased loaf pan (9 x 5). Bake for 60 min
