Easy Sopapilla Cheesecake Dessert

My philosophy recently – quick, easy and with a lot of flavour.
But then again, I don’t let myself get into a culinary rut, so I always try to turn everyday dishes around. But before I do, I want to share the news with you. Today, our angel woke up and happily jumped into her mother’s womb and decided to show her father how to kick. Yes, the day has come for both of us to finally feel our baby’s first kicks.

There aren’t many things I want for my child. Health, a good orientation, a chance in life, to meet great people, a dish that will make him remember the house he grew up in. I wish him a Sunday brunch that will follow him throughout his life as his best memory, I wish him a carefree late awakening with a loud clattering of plates in the dining room. I wish him to enjoy the smell of coffee in the morning, even if he doesn’t drink it. I wish him life and I wish him to laugh… OK, OK… As I promised, I won’t bother you too much with my private life and my gestation days and I’ll move on to what you all naturally expect.

Ingredients

2 packages of Pillsbury croissants

2 packages of cream cheese, room temperature

1 cup of sugar

1 teaspoon vanilla

1/4 cup butter (melted)

1 tablespoon of cinnamon

4 tablespoons of sugar

* the honey

Instructions

Preheat the oven to 350 degrees.

Spray a 9 x 13 baking dish with cooking spray.

Press a can of rolls to the bottom of the baking dish, making sure to reach the edges and hold them together.

* Bake the first layer of croissant dough for 5 to 8 minutes. (Optional, this way I make sure it’s well done. I don’t like raw dough)

Mix the softened cream cheese, sugar and vanilla.

Spread mixture over croissants.

Roll remaining croissant over top, stretch to edges and seal.

Brush entire top of croissant with melted butter.

Sprinkle the top with 1 tablespoon of cinnamon and 4 tablespoons of sugar.

Bake for about 30 minutes, or until golden brown.

Eat hot (it will be a hot mess!) or let cool and refrigerate for several hours before serving.

Cut into triangles or squares, drizzle with a little honey if desired and serve.
