Melt-in-your-mouth beef with creamy mushroom gravy. This recipe is super easy to throw together either in the oven or slow cooker. Everyone needs a chuck roast in their life, and this creamy mushroom beef chuck roast is everything!
1 tbsp olive oil
5 lbs chuck roast
1 large yellow onion, chopped
(1) 454 g. package of white or cremini mushrooms
(1) 1 oz. package dry onion soup mix
1 ¼ c. water
(2) 10.75 oz. can of cream of mushroom soup
How to make Creamy Mushroom Beef Chuck Roast
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: heat the olive oil in a skillet or Dutch oven over medium heat. Once the oil is hot, add the chuck roast in the skillet and cook all sides until brown. Put the chuck roast into the Dutch oven or lidded roaster. Around the roast, add the mushrooms and onions.
Step 3: Combine the soups and water until smooth, then pour this over the chuck roast.
Step 4: Cover roaster/Dutch oven and put in the preheated oven. Cook the roast for about 20 minutes. Adjust the oven temperature to 325 degrees F and continue to cook the roast for 4 to 5 hours until pull-apart tender.
Step 5: To make the gravy, mix the mushrooms, onions, and drippings. Pour this over the beef and serve. Enjoy!
Slow Cooker Instructions:
Step 1: Heat the olive oil in a skillet over medium heat. Place the chuck roast in the skillet once the oil is hot and cook until all sides are brown. Transfer the roast into a slow cooker and add the mushrooms and onion around it.
Step 2: Pour the mixed soups and water over the roast. Put the lid on and set to cook on low for 8 to 10 hours until the roast is pull-apart tender.
Step 3: Transfer the beef to a plate and pour the gravy (whisked mushrooms, onions, and drippings) over. Enjoy!
