CHICKEN AND GREEN BEAN STIR FRY

Ingredients:

Chicken

2 pounds boneless skinless chicken thighs cut into cubes

3 tablespoons cornstarch

¼ c vegetable oil plus 2 tbsp or more as needed

Vegetables

2 bell peppers sliced

1 c steamed green beans in a bag See notes below

½ tablespoon garlic cloves minced

¼ teaspoon ginger (optional)

Seasonings

1 teaspoon garlic powder (add more for taste)

1 teaspoon crushed red pepper

⅛ teaspoon sesame oil

1 ¼ c sweet chilli Sauce

Directions:

Add the sliced chicken, 1 tbsp of oil, garlic powder, salt, and pepper. Toss until well combined. Make sure to rub the chicken thighs until well coated.

Coat each chicken thigh with cornstarch.

Place a large skillet on the stove and turn the heat to medium-high.

Add 3 tbsp of vegetable oil and allow it to become hot.

Add the chicken pieces and cook until brown and crispy. Make sure to cook them in batches to prevent overcrowding.

Remove the chicken pieces from the skillet onto a clean plate lined with paper towels to drain any excess oil.

In the same skillet, add the bell peppers and saute until soft.

Add the garlic and saute until aromatic.

Put the chicken back to the skillet as well as the green beans, sesame oil, ginger, red peppers, and chilli sauce. Stir everything until well mixed.

Serve hot over rice and enjoy!
