Baked-parmesan-garlic-potato-wedges

INGREDIENTS

.3-4 large russet potatoes, sliced
.4 tablespoons olive oil
.2 teaspoons salt
.2 teaspoons garlic powder
.2 teaspoons Italian seasoning
.cup shredded parmesan cheese
.Optional: fresh parsley (or cilantro) ranch or blue cheese dressing for dipping

INSTRUCTIONS

Preheat oven to 375. Grease a large baking tray with a little oil and set aside.
Place the potato wedges in a large bowl. Drizzle with olive oil and stir until covered. In a small bowl, whisk together salt, garlic powder, and Italian seasoning. Sprinkle the potato slices with grated cheese, turn to coat, and sprinkle with the seasoning mixture.
Lay the potato wedges on the prepared baking sheet in a single layer with the skin sides facing down. Bake for 25-35 minutes, until potatoes are tender with a fork and golden. Sprinkle with fresh chopped parsley and sauce for dipping.
