2 sticks of salted butter, softened and sliced into cubes

½ lb. bacon

Salt and pepper, to taste


1 c grated cheddar cheese, plus more for topping

1 c sour cream

8 medium russet potatoes, Equal to about 6 lbs.

3 green onions, sliced

2 tsp seasoned salt

3 tbsp canola oil

1 c whole milk


Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Place the sour cream, milk, and butter on your counter. They should be at room temperature.

Rinse the potatoes with water and scrub them to remove any dirt.

Rub each cleaned potato with canola oil.

Arrange the potatoes in a single layer onto a baking sheet.

Place them inside the preheated oven and bake for about 40 minutes or until fork-tender.

Place a large pan on the stove and turn the heat to low.

Add the bacon and cook for a few minutes until crispy. Transfer them onto a clean plate lined with paper towels to drain excess grease.

Remove the potatoes from the oven and allow them to rest at room temperature.

Reduce the heat of the oven to 350 degrees F or 175 degrees C.

Set aside two potatoes and peel the rest.

Slice each peeled potato into three pieces and put them into a large bowl.

Crumble the bacon and set aside some for later use.

Add the remaining bacon into the bowl with the potatoes.

Add the sour cream, milk, grated cheese, salt, seasoned salt, and pepper into the bowl with the bacon and potatoes. Mash everything until well blended.

Apply cooking spray to a 9×13-inch baking dish.

Transfer the potatoes to the prepared baking dish and spread them evenly.

Sprinkle the reserved bacon and shredded cheese on top.

Place it inside the preheated oven and bake for about 25 minutes or until done.

Garnish with chopped green onions.
