* Ingredients :
° 3/4 cup milk
° 2 tablespoons of white vinegar (see note)
° 1 cup all-purpose flour
° 2 tablespoons of white sugar (I used 3)
° 1 teaspoon baking powder
° 12 teaspoon of baking soda
° 1/2 teaspoon salt
° 1 egg
° 2 tablespoons melted butter
° 1 teaspoon vanilla

Combine milk and vinegar in a small bowl for 10 minutes until “spoiled”. This is an important step and it is called “curd” which is very different from yogurt . Set aside and mix the dry ingredients in a bowl.
In a smaller bowl, whisk together the curd, eggs, vanilla, and melted butter. Pour in the dry ingredients and whisk until most of the lumps are gone, but don’t go overboard ! The mixture will be thicker, do not add more liquid.
Leave the mixture to sit undisturbed for ten minutes !! After 10 minutes, you will see bubbles in the mixture, it is very important not to stir again. Gently dip (do not spill) 1/2 cup of the mixture and place on a buttery grill or skillet. Cook until bubbles appear on the surface of the pie, then flip it over with a spoon and brown the other side.
