These easy muffins are so simple to make thanks to a box of Betty Crocker lemon cake mix! You’ll just need a little butter, milk, eggs and lemon zest. They are perfect for breakfast, yummy on-the-go snacks, lunch boxes and after dinner treats. Kids love them!
Ingredients
- 1 box lemon cake mix
- 3/4 cup softened salted butter (1 1/2 sticks)
- 3 eggs
- 1/2 cup milk (2% or whole)
- the zest of 1 lemon
Instructions
- Preheat your oven to 350 degress and line or grease a muffin pan with non-stick spray.
- In a large bowl, combine the butter, milk, eggs and lemon zest.
- Stir in the cake mix until well combined.
- Scoop the batter into your prepared muffin pan filling them up about 3/4 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
Recipe Notes
- You could also add about 2 tablespoons of poppy seeds if you have them on hand.
- Blueberries are also wonderful paired with lemon! Stir in about half a cup to the batter before baking.
