Sweet Cake Mix Lemon Muffins

These easy muffins are so simple to make thanks to a box of Betty Crocker lemon cake mix! You’ll just need a little butter, milk, eggs and lemon zest. They are perfect for breakfast, yummy on-the-go snacks, lunch boxes and after dinner treats. Kids love them!

Ingredients

  • 1 box lemon cake mix
  • 3/4 cup softened salted butter (1 1/2 sticks)
  • 3 eggs
  • 1/2 cup milk (2% or whole)
  • the zest of 1 lemon

Instructions

  1. Preheat your oven to 350 degress and line or grease a muffin pan with non-stick spray.
  2. In a large bowl, combine the butter, milk, eggs and lemon zest.
  3. Stir in the cake mix until well combined.
  4. Scoop the batter into your prepared muffin pan filling them up about 3/4 full.
  5. Bake for 15-20 minutes or until a toothpick comes out clean.

Recipe Notes

  • You could also add about 2 tablespoons of poppy seeds if you have them on hand. 
  • Blueberries are also wonderful paired with lemon! Stir in about half a cup to the batter before baking.
