Southern Candied Sweet Potatoes

Thanksgiving dinner is getting closer and closer. I mean, shoot, we are already in the second week of school. Can you believe that!

Each year, although I’m highly traditional and you’ll always find traditional dishes on my holiday table, I try and look for new recipe ideas. I love serving my family flavorful dishes over the holidays.

One thing I always make is sweet potatoes. However, the casserole that I whip up is very time consuming to make. Between the turkey, stuffing, and scalloped potatoes, I don’t always have time to mess with other dishes.

So, when I stumbled across this easy candied sweet potato recipe I was quite pleased. It really doesn’t get easier than this, folks.

Ingredients:

2 cups white sugar

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 pinch salt

1/2 cup butter

6 sweet potatoes, peeled and sliced

Instructions:

In a small bowl, mix the sugar, cinnamon, nutmeg, and salt together.

Melt butter in a large skillet over medium heat; add sweet potatoes, and stir to coat.

Sprinkle sugar mixture over the sweet potatoes, and stir.

Cover skillet, and reduce heat to low.

Cook, stirring occasionally, for 1 hour, or until the sauce is dark and the potatoes are candied.

They should be tender, but a little hard around the edges.

Stir in vanilla, and serve.
