SKILLET ITALIAN SAUSAGE AND PEPPERS WITH WHOLE-WHEAT PENNE

Ingredients:

1 lb. Italian sausage links 1 package

12 oz. whole-wheat penne pasta

1 small red pepper sliced

1 small yellow onion sliced thin

1 small green pepper sliced

12 oz. water

½ c red wine we use cooking red wine

8 oz. tomato sauce

6 oz. tomato paste

1 tsp sugar

½ tsp Italian seasoning

Parmesan Cheese for finishing

½ tsp salt

Directions:

Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.

Add the pasta and cook until firm to bite. Drain and rinse with cold water to stop the cooking process. Set aside the pasta water.

Place a large skillet on the stove and turn the heat to medium-high.

Add 1 tbsp of olive oil and allow it to become hot.

Add the sausages and cook until brown.

Remove the sausages from the skillet, then slice them into 1/4-inch pieces.

Add 1 tsp of olive oil into the same skillet and allow it to become hot.

Add the onions and peppers, then saute until soft. This usually takes about 5 minutes or so.

Put the sausages back to the skillet as well as the red wine. Scrape the bottom of the skillet to get the browned bits.

Add the tomato sauce, water, tomato paste, sugar, salt, and Italian seasoning. Stir until well blended.

Allow the mixture to boil, then turn the heat down to low and simmer for about 10 minutes or so.

Add the drained pasta and toss until well coated by the delicious sauce. Add a bit of the pasta water if the texture becomes too thick.

Sprinkle a generous amount of Parmesan cheese on top. Season with salt and pepper if needed.

Serve hot and enjoy!

Note:

Place any leftovers in an airtight container, then put them inside the fridge.
