PERFECT BLUEBERRY MUFFINS RECIPE – The BEST bakery style blueberry muffins made at home. This recipe is also simple to make. The secret to these wonderful muffins is the sour cream, which makes them super moist and full of flavour. These muffins are bursting with blueberries and are absolutely delicious.
Ingredients
3 cups of blueberries
1 1/4 cup granulated sugar
1 1/4 cups light brown sugar
4 large eggs
1 cup of vegetable oil
1 teaspoon of pure vanilla extract
2 cups sour cream
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon of salt
Demerara sugar to sprinkle on top (optional)
Itinerary
Preheat the oven to 400 degrees.
Grease 24 muffin cups (normal size) or line the muffin cups with paper.
In a large bowl, add the eggs and beat, then slowly add the sugar (granulated and brown) beating until smooth. Then slowly add the oil and vanilla, mixing until well blended.
In another large bowl, combine the flour, salt and baking soda.
Add the flour mixture and sour cream to the egg mixture, alternating between the two, stirring until well blended. Do not over mix.
Finally, gently fold the blueberries into the mixture. Again, do not over mix. Fill the muffin cups 3/4 full until almost full, sprinkle the top with Demerara sugar (optional). Place on the center rack of the oven and bake for 20 minutes. Using a toothpick, check the center of a muffin to make sure it comes out clean.
Remove from the oven, let cool for a few minutes then place muffins on the cooling rack. Serve warm or at room temperature. Enjoy!
