Ingredients
- 2 ½ cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp kosher salt
- 1 cup unsalted butter, softened
- 1 ½ cup granulated sugar, divided
- ¾ cup light brown sugar, packed
- 2 large eggs
- 2 cups creamy peanut butter
- 1 tsp vanilla extract
Instructions
- In a bowl, combine flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat butter with 1 cup granulated sugar, and brown sugar. Beat until creamy.
- Add in eggs, vanilla, and peanut butter. Mix until combined. Slowly add in flour mixture, blending until combined (do not over beat).
- Cover bowl with plastic wrap and refrigerate cookie dough for one hour.
- When ready, add remaining ½ cup sugar to a small bowl. Using a 2 Tbsp cookie scoop, spoon dough and roll into a ball. Roll in sugar and place on parchment covered baking sheet.
- Use the tines of a fork to press criss-cross marks.
- Bake in a 350 degree F oven for 10-12 minutes. Remove and cool on wire rack. ENJOY.
