INGREDIENTS :
- 3/4 c freshly grated Parmesan cheese
- 1/2 lemon (zest, plus juice)
- 2 tbsp fresh parsley (cut small or chopped)
- 1/2 tsp garlic powder
- 1 1/4 tsp paprika
- 3 tbsp salted butter
- 1 1/2 pounds fresh cod
DIRECTIONS :
- Prepare the oven and preheat to 200 degrees C or 400 degrees F.
- Apply cooking spray on a rimmed baking sheet.
- In a mixing bowl, add the Parmesan cheese, paprika, and garlic powder. Whisk until well combined.
- Slice the lemon, then squeeze and zest. Put it into the cheese mixture and stir until well blended.
- Finely chop the parsley and add it to the cheese mixture. Stir until well mixed.
- Check if the fish has bones and use paper towels to pat it dry.
- Place a pan on the stove and turn the heat to medium.
- Add butter and allow it to melt.
- Dip the fish into the melted butter, then into the cheese mixture. Make sure to coat all sides completely.
- Arrange the fish into the prepared baking sheet and spread the remaining butter on top.
- Place it inside the preheated oven and bake for about 15 minutes.
- Add lemon juice over the fish.
- Serve and enjoy!
Notes:
- Serve this dish with bread with garlic butter.
- You can also serve it over rice.
- Place any leftovers in an airtight container and place them inside the fridge. They last up to 3 days.
