Looking for quick and easy breakfast ideas? My kids love these simple muffin mix pancakes! They are perfect for busy mornings and made with just 3 cheap ingredients. The small muffin mix packages come in a variety of flavors so they are so much more delicious and fun to make than regular pancakes.Course: BreakfastKeyword: 3 ingredients, breakfast, easy, fast, kids, muffin mix, pancakes, quickServings: 10 small pancakesIngredients
- 1 (6-7oz) package of muffin mix
- 1 egg
- 2/3 cup milk (start with slightly less)
Instructions
- Preheat a skillet on medium-low.
- In a medium size bowl, use a whisk or fork to combine the dry muffin mix, egg and milk.
- Place about 2 tbsp of the mixture onto your pre-heated and greased skillet; cook for about 2 minutes on each side. Repeat for the rest of the batter.
- Serve with butter and syrup. Enjoy!
Recipe Notes
- The Betty Crocker packages have less ounces of dry mix in their packages than the other brands, so I’ve found that slightly less than 2/3 cup of milk works best for this brand.
- The smaller the pancakes, the easier they are to flip. If you measure each one out to 2 tbsp you should get about 10 pancakes.
- You can also add a little vanilla extract or even some additonal mix-ins to your batter if you’d like (chocolate chips, fruit, flax meal, etc.)
