I have always been a fan of walnut cookies. This Mocha flavour is a nice twist from the usual chocolate dip cookies. Try it out and taste it yourself. Enjoy!
Ingredients:
2 cups semisweet chocolate chips
2 tablespoons instant coffee powder
2 teaspoons boiling water
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
½ cup butter softened
½ cup white sugar
½ cup packed brown sugar
1 egg
½ cup chopped walnuts
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a small mixing bowl, add 1/2 cup of chocolate morsels and hot water. Allow the chocolate to melt and let it sit at room temperature to cool.
Step 3: In a small cup or bowl, add 2 teaspoons of boiling water and instant coffee. Stir until coffee dissolves.
Step 4: In a small mixing bowl, add the baking soda, flour, and salt. Stir until well mixed.
Step 5: In a large mixing bowl, add the sugars, coffee, and butter. Beat until well mixed and creamy.
Step 6: Add in the melted chocolate morsels and egg. Stir until well mixed.
Step 7: Slowly add in the flour mixture as well as the rest of the chocolate morsels and walnuts. Stir until well mixed.
Step 8: Form small balls out of the mixture and place them on cookie sheets.
Step 9: Place inside the preheated oven and bake for 10 to 12 minutes or until done.
Step 10: Remove from the oven allow the cookies to stand for 3 minutes on the cookie sheets.
Step 11: Remove the cookies from the cookie sheets.
Step 12: Serve and enjoy!
