I cut the tops off the poblanos before roasting them. Its so much easier to get the seeds out. Char them, put in bag to steam then peel skin off. Add in blender with everything except the spaghetti and blend really well. In a pot bring water to boil. Add a few shakes of salt. Boil about 7 min. Depending on how soft you want it. Strain. In pan, pour the sauce in and heat on med about 5 min. Add spaghetti. Stir and let sit on low about 15 min. Serve with chicken or steak milanesa (optional.. i didnt this time) add queso fresco and enjoy !!
