This easy weeknight beef taco pasta is incredibly easy to throw together using just pantry ingredients. A simple yet filling dinner with loads of flavour and perfect for busy days and busy moms like myself.
The first time I made this taco pasta, it was a breeze! I have all the ingredients in hand, and all I did was put them together. I never had any second thought because I know that my family will love every inch! I was right! This beef taco pasta intermediately becomes their favourite rotation.
I love spicy food, so I always add more seasoning. But you can adjust it to suit your taste. If preferred you can also add veggies such as green peppers. It’s a nice addition to this beef taco pasta, and it gives it a pop of colour.
INGREDIENTS
14 ounces bow-tie/farfalle pasta
1 pound lean ground beef
1 medium onion, diced
3/4 c. chunky salsa
1 c. frozen corn

5 ounces tomato paste
1/2 teaspoon garlic powder
1 c. sharp cheddar cheese
1–2 teaspoons taco seasoning (or more, if desired)
How to make Easy Weeknight Beef Taco Pasta
Step 1: Following the package directions, cook the pasta. Drain when done and set aside.
Step 2: In a skillet, cook the ground beef until no longer pink. Drain the excess grease when done.
Step 3: To the browned ground beef, add the onions and the rest of the ingredients (salsa, corn, water, tomato paste, garlic powder, and taco seasoning) except the cheddar cheese. Bring the mixture to a boil.
Step 4: Decrease the heat once boiling and simmer until the liquid has slightly reduced. Then, add the cooked pasta and stir everything until well mixed.
Step 5: When done, remove the skillet from the heat. Cover and let it sit for approximately minutes. When ready, sprinkle with cheddar cheese on top. Enjoy!
