EASY SLOW COOKER TACO PASTA

This slow cooker Taco Pasta has been one of my go-to for busy days. Prepare the ingredients a night before and throw everything together in the slow cooker the next day. Super delicious, filling, and comforting. One heck of a pasta meal to serve everybody!

Ingredients

1 lb lean ground beef

salt and pepper

1 bell pepper (chopped)

15 oz can crushed tomatoes

1 c jarred salsa (I used mild)

15 oz can corn (drained)

3 tbsp taco seasoning

2 ½ c water or low sodium chicken broth (used 14.5 oz can of chicken broth plus enough water to total 2 ½ c)

12 oz shell pasta shapes (whole grain or white)

1 c shredded cheddar cheese

How to make Easy Slow Cooker Taco Pasta

Step 1: Add the beef in a heated large skillet. Season with salt and pepper, then cook over medium-high heat, stirring often until the beef is browned. Place the cooked beef in a slow cooker.

Step 2: Add in the bell pepper, crushed tomatoes, salsa, corn, taco seasoning, and broth or water. Stir to combine.

Step 3: Cook for 5 to 6 hours on low or 2 to 3 hours on high.

Step 4: Add the pasta into the slow cooker and stir. Continue to cook for 10 to 20 minutes more on high. Cooking time will vary depending on the slow cooker so make sure to check for doneness at 10 minutes.

Step 5: At the end, stir in the cheddar cheese.

Step 6: Serve immediately. Enjoy!
