I enjoy homemade meals. I used to order dinner for a quick meal but soon realized that there are hundreds of recipes I can make even with my busiest schedule. I have my favourites which I already lost count of and go-to. One of my top picks is meatballs. I have tried and tested a lot of homemade recipes, and the one that stands out the most is this Crockpot Hawaiian Meatballs made with bell pepper, frozen meatballs, unsweetened pineapple chunks, and a few pantry ingredients. At home, we love dishes with pineapple in them, this is one of the reasons why we immediately fall deep for these Hawaiian meatballs. The sauce is not gonna be thick, so if you prefer a thicker sauce, you can simply stir in a slurry. You can even make homemade meatballs using either lean ground beef or ground turkey if that is what you wanted. To cook the meatballs, you can either bake or pan fry them.
INGREDIENTS :
- 1 c. sliced red bell pepper
- 1 c. sliced green bell pepper
- 2 tablespoons soy sauce
- 3 pounds packaged of precooked, frozen meatballs
- 2 tablespoons cornstarch
- 1 c. brown sugar
- 2/3 c. white vinegar
- 1 15-ounces can of unsweetened pineapple chunks, drained BUT saving the juice
*If you prefer a thicker sauce, combine 2 tbsp cornstarch with 2 tbsp cold water until well blended, then gradually pour this into the crockpot about 10 minutes before you turn the crockpot off.
DIRECTIONS :
Step 1: Into a crockpot, place the frozen meatballs, then top with the bell peppers and pineapple chunks.
Step 2: For the sauce, whisk the reserved pineapple juice with brown sugar, cornstarch, vinegar, and soy sauce until blended. Pour this over the meatballs.
Step 3: Set the crockpot on low and cook the meatballs for 3 to 4 hours. Before serving, give the meatballs a quick stir and enjoy with rice
