CRISPY CHICKEN FRITTERS

Stuffed with flavours mini cakes that are crispy outside and tender inside. Easy and quick to make, inexpensive, and kid-friendly.

INGREDIENTS

2 12.5 ounces cans white premium chunk chicken breast

1 Egg

1 tsp Dijon mustard

1/2 tsp salt (see notes)

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp black pepper

1/8 tsp dried thyme

1/4 c plain dried bread crumbs

Additional bread crumbs

Vegetable oil

How to make Crispy Chicken Fritters

Step 1: Place the chicken in a colander to drain them well for about 20 to 30 minutes. Using a heavy bowl, press the chicken down.

Step 2: Chop the chicken roughly or in an even size around 1/4 inches each.

Step 3: Into a mixing bowl, add the chicken, egg, Dijon mustard, salt, spices, and 1/4 cup bread crumbs. Use a fork to stir until incorporated.

Step 4: Into a shallow bowl or pie plate, add the rest of the bread crumbs and set aside.

Step 5: Make 6 pieces of fritters, shape into a tight mini hockey puck and coat each with the bread crumbs.

Step 6: In a large skillet, heat about 1/4-inch oil over medium to medium-high heat. Once hot, add the chicken fritters and pan-fry on both sides until crispy and golden brown.

Step 7: Before serving, garnish with fresh parsley. Enjoy!

NOTES:

Adjust the salt to your liking. Begin adding 1/4 tsp and go from there.

For homemade chicken nuggets, shape the fritters into smaller potions or wider and flatter for crispy chicken sandwiches.

Use either bread crumbs or panko. No matter.

In place of Dijon use regular mustard instead. Mustard is added to help the seasoning pop and balances the richness.
Make this in an air fryer. Use cooking spray to grease each side of the fritters and bake until golden brown at 400 degrees.
