CREAMY GARLIC CHICKEN PASTA (WITH TOMATO & SPINACH)

INGREDIENTS

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 lb boneless skinless chicken breast
  • 10 oz. dry pasta (any kind)
  • salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 4 cloves garlic minced
  • 1 c. tomatoes diced
  • 1/2 c. Parmesan cheese shredded or grated
  • 2 c. heavy cream (or 16 ounces)
  • salt & pepper to taste
  • 2 c. spinach chopped, optional

INSTRUCTIONS

Step 1: Following the package directions, cook the pasta in a large pot with boiling water.

Step 2: Sprinkle all sides of the chicken breasts with salt garlic powder, Italian seasoning, paprika, and salt & pepper.

Step 3: In a large heavy-duty pan, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken breasts to the pan and sear for about 5 minutes on each side until completely cooked. When done, set the chicken thighs aside.

Step 4: Add the butter and garlic to the same pan and cook for about a minute until aromatic. Then, add the tomato and spinach. Continue to cook for an additional 2 to 3 minutes or until the tomato and spinach are wilted and soft.

Step 5: Decrease the heat, then add the heavy cream and Parmesan cheese. Stir well until blended. To taste, season with more salt and pepper.

Step 6: Drain the pasta when done and cut the chicken into thin slices or cubes. Place them into the pan and toss to coat.
