CHICKEN PICCATA

Ingredients:

Chicken:

¼ c Parmesan cheese, finely grated

1 tbsp salted butter

½ tsp pepper

2 large boneless, skinless chicken breasts

1 tsp salt

1 tsp garlic powder

½ c flour

3 tbsp olive oil

Sauce:

1 c chicken broth

½ c dry white wine, like chardonnay or pinot grigio

2 tbsp capers, drained

4 cloves garlic, thinly sliced

2 tbsp lemon juice

1/4 c fresh parsley, roughly chopped

2 tbsp cold salted butter

Directions:

Chicken:

In a large shallow bowl, add garlic powder, Parmesan cheese, flour, flour, pepper, and salt. Whisk everything until well incorporated.

Make three thin slices out of each chicken breast.

Wrap each chicken slice with plastic, then gently pound it with a meat mallet to about 1/4-inch thick.

Use paper towels to pat dry the chicken.

Add each chicken slice into the flour mixture, then toss until well-coated. Remove any excess flour.

Place a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp of butter and 3 tbsp olive oil.

Add the chicken into the hot skillet, then sear each side for about 3 minutes or until they turn golden brown. Transfer the chicken onto a clean plate.

Sauce:

In the same empty skillet, add garlic and wine. Scrape the bottom to get the browned bits and simmer for about 5 minutes.

Add capers, chicken broth, and 2 tbsp lemon juice. Stir until well blended.

Put the chicken back into the skillet with the sauce, then toss until well-coated. Simmer everything for 5 more minutes or until thick.

Turn the heat down to low, then add 2 tbsp of cold butter and allow it to melt. Remove from the heat and sprinkle freshly chopped parsley on top to garnish.
