CAJUN CAFE’S BOURBON CHICKEN

This is a great meal perfect for the crowd and fancy enough to serve on date nights! Made with only a few basic ingredients and ready in a breeze, this Cajun Cafe’s Bourbon Chicken is no doubt a must-try and a keeper!

My husband when we were still dating, made this amazing dish for me. It was our first meal as companions. I love every bit of this juicy, tender, and incredibly flavorful chicken. Perfect to pair with just about anything. As for me, I enjoy serving this over rice or with my favourite steamed veggies on the side.

INGREDIENTS

1 lb chicken leg or thigh meat, cut in bite-size chunks

4 oz. soy sauce

1/2 c. brown sugar

1/2 tsp garlic powder

1 tsp powdered ginger

2 tbsp dried minced onion

1/2 c. Jim Beam Bourbon Whiskey

2 tbsp white wine

How to make Cajun Cafe’s Bourbon Chicken

Step 1: In a bowl, add the soy sauce, brown sugar, garlic powder, powdered ginger, dried minced onion, whiskey, and white wine. Whisk until well combined. Pour this in a bowl over the pieces of chicken. Tent and keep in the fridge to marinate the chicken for a couple of hours, stirring often. I would suggest letting the chicken marinate overnight.

Step 2: When ready to serve, preheat the oven to 350 degrees F. And place the chicken in a single layer in the baking dish with the marinade. Place in the preheated oven and bake until completely cooked, basting the chicken with the marinade every 10 minutes. Take the chicken out of the oven when done.

Step 3: Into a frying pan, heat the pan juices with the brown bits and 2 tbsp white wine. Stir well, then add the chicken and cook for a minute.
