Brown Butter Smookies

Ingredients

  • 1 cup butter
  • ½ cup granulated sugar
  • 1 cup light brown sugar
  • 1 egg plus 1 yolk
  • 2 tsp. vanilla extract
  • 2½ cups flour
  • 1 tsp. cornstarch (I have sometimes added 2T. cornstarch for more oomph!)
  • 1 tsp. baking soda
  • ½ tsp. kosher salt
  • 2 T. whole milk
  • 1½ c. semi-sweet chocolate chips

Topping

  • mini marshmallows, fun size Hershey bars, broken into pieces and graham crackers chopped into small pieces

Instructions

  1. Brown the butter in a skillet until lightly browned and smells nutty.
  2. Transfer to a heat safe bowl and cool a bit.
  3. Cover and chill in the fridge until solid, 2 hours or make a day ahead to save time.
  4. Beat chilled butter in a mixer.
  5. Add sugars and beat
  6. Add egg, yolk and vanilla to combine.
  7. On low, add flour, cornstarch, baking soda and salt.
  8. Add milk.
  9. Add chips and chill dough 2-3 hours.
  10. Preheat oven to 350 and let dough sit on counter a few minutes until easier to scoop.
  11. Scoop 1½ T. of dough for each cookie onto parchment lined cookie sheets.
  12. Bake 9 mins.
  13. Remove and top with 3 mini marshmallows and one piece of chocolate.
  14. Return to the oven for approx 3 mins.
  15. Remove from oven and add a piece of graham cracker.
  16. After 5 minutes, transfer cookies to a cooling rack to cool completely.
