This Bacon & Cheese Smothered Garlic Chicken is an incredible dinner perfect for everyone! Amazingly delicious with an impressive creamy garlic sauce. Serve this dish over your favorite pasta for a filling meal any time!
INGREDIENTS
3 tbsp olive oil
1 lb boneless, skinless chicken breasts, sliced thin
6 slices of thick-cut bacon, cooked and chopped
1 c. heavy cream
½ c. chicken broth
4-6 slices of deli-sliced Mozzarella cheese
1 tsp garlic powder
1 c. fresh spinach, chopped
1 tsp fresh parsley
¾ c. freshly grated Parmesan cheese
½ c. sun-dried tomatoes
½ tsp of black pepper

How to make Bacon & Cheese Smothered Garlic Chicken
Step 1: Cook the thick bacon in a large skillet. Set aside when done. Drain the bacon fat except for 1 tbsp. Once the bacon is cool to handle, chop and set aside.
Step 2: Add the olive oil to the reserved bacon fat in the same large skillet. Add the pieces of the sliced chicken and sear for about 4 minutes per side over medium to high heat or until browned and cooked through. Set the chicken aside when done.
Step 3: Add the heavy cream to the now-empty skillet along with the chicken broth, garlic powder, parsley, salt, pepper, and Parmesan cheese. Stir well and cook over medium/high heat until the mixture starts to thicken.
Step 4: Into the skillet, add the spinach and sun-dried tomatoes. Let everything simmer until the spinach begins to wilt. Then, adjust the heat to low.
Step 5: Add the chicken one piece at a time, lightly coating them with the sauce. Over each chicken piece, place the sliced mozzarella cheese and sprinkle with cooked bacon.
Step 6: Put the lid on and let the dish sit for about a minute to allow the cheese to melt completely.
