Bangers and Mash

INGREDIENTS

  • 4 vegan sausages
  • 2 cups onions, sliced
  • 6 Tbsp dairy free butter
  • 2 Tbsp olive oil
  • 2 tsp brown sugar
  • 2 tbs balsamic vinegar
  • 1/4 cup Tamari
  • 1 cup vegetable broth
  • 1/2 tsp corn starch
  • 2 cloves garlic, minced
  • 1 tsp mustard
  • salt, pepper to taste
  • Mashed Potatoes

INSTRUCTIONS

  1. Heat 2 Tbs butter in a pan and the same amount of oil in a pan. Add sausages cook them for around 4 minutes, remove.
  2. Give remaining 4 Tbsp butter into the same pan. Add onions, garlic, and brown sugar. Caramelize for 20 minutes.
  3. Make mashed potatoes, see linked recipe directions.
  4. Prepare a cornstarch slurry by mixing 1 Tbsp vegetable broth with 1 tsp corn starch. Whisk into the onions, then add remaining broth, tamari, mustard, and a pinch of salt and pepper.
  5. Return the sausages to the onion gravy and let simmer for another 5 minutes on low heat.
  6. Serve with mashed potatoes and enjoy.
