INGREDIENTS
- Dough:
- 2 whole large eggs
- ½ lb sweet Italian sausage, removed from casings
- 2 tbsp cream cheese
- ¼ c. coconut flour
- 1 c. almond flour
- ¼ c. freshly grated Parmesan cheese
- 1 ½ c. shredded mozzarella cheese
- Toppings:
- 1 medium onion, sliced
- 1 tbsp olive oil
- 1 medium Bell pepper, sliced, (some bell pepper, green, red, yellow, or orange)
- 2 tbsp fresh garlic passed through a garlic press
- ½ c. shredded sharp cheddar cheese
- 2 c. shredded mozzarella cheese
- 8 oz. baby spinach
- ½ c. pizza sauce (leave out the sugar)
INSTRUCTIONS
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Place the uncooked sausage meat, cream cheese, almond flour, coconut flour, 1 ½ c. Mozzarella cheese, Parmesan cheese, and eggs in a medium bowl. Mix well.
Step 3: Using kitchen pan spray, grease a quarter (13 x 9-inch) sheet pans.
Step 4: Into the prepared pan, press the mixture to an even edge. Before baking, make sure the mixture of cold. If not, pop in the fridge for about 30 minutes to form the crust up.
Step 5: Place in the preheated oven and bake for about 12 minutes, turning the pan halfway through baking.
Step 6: In the meantime, saute the onions and peppers in a medium skillet with olive oil over medium heat for about 10 minutes until a little soft. Then, add the spinach and continue to cook for a minute more until wilted. Lastly, add the garlic. Take the pan off the heat.
Step 7: On the bottom of the crust, spread the pizza sauce and top with the cooked vegetables. On top, sprinkle the cheddar and mozzarella. Return to the oven and bake for another 25 minutes or until the top is brown and the cheese has melted. To encourage more browning, broil for a minute.
Step 8: Remove from the oven when done and slice into eight potions. Enjoy!
