Ingredients
- 4 pounds chicken pieces (cut up, skin removed)
- 1 tablespoon Cajun seasoning
- 1 medium yellow onion, sliced thin
- 1 bell pepper, sliced thin
- 3/4 cup brown sugar, packed
- 1/4 cup all purpose flour
- 2/3 cup water
- 1/3 cup white vinegar
- 1/3 cup reduced-sodium soy sauce
- 2 tablespoons ketchup
- 1 teaspoon yellow mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
Step 1
Slice onions and bell peppers, layer half on the bottom of the crock pot, layer the rest over the chicken. Sprinkle chicken with cajun seasoning and salt and pepper if desired. Place in a chicken in crock pot, cover with the rest of the onions and bell peppers.
Step 2
In a small saucepan, combine brown sugar and flour. Stir in the rest of the ingredients. Bring to a boil, cook and stir for about 2 minutes until the sauce thickens. Pour over the chicken and veggies. Place cover on crock pot and let it cook on low for 6-8 hours. Serve over hot noodles or rice.
