SLOW COOKER HONEY TERIYAKI CHICKEN

INGREDIENTS  1x2x3x

  • 4 boneless, skinless chicken breast
  • 1 cup chicken broth
  • 1/2 cup water
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup light brown sugar
  • 1/4 cup honey
  • 3 garlic cloves (minced, pressed, from a jar, or garlic paste)
  • 1 teaspoon sesame oil
  • 1/4 cup cornstarch
  • 1/4 cup cold water

INSTRUCTIONS 

  • Spray slow cooker with cooking spray and place chicken breasts into the bottom.
  • In a mixing bowl combine chicken broth, water, soy sauce, brown sugar, honey, garlic, and sesame oil. Whisk together to combine. Pour over the chicken.
  • Cook on low heat for 6-7 hours.
  • 30 minutes before serving take out the chicken and place on a plate and shred with two forks.
  • Mix cornstarch and cold water in small bowl and pour into the teriyaki sauce in the slow cooker. Whisk to combine. Add the shredded chicken back in and let cook on low for the remaining 30 minutes of cook time.
  • Serve over cooked white rice and garnish with green onions and sesame seeds.

NOTES

Serving Size : The nutrition information is for 8 servings. Each serving being 1 cup of honey teriyaki chicken. Any rice or toppings are extra and not included in the nutrition information. Chicken : If the chicken breasts are larger then just use 3 of them. I use the ones from Costco and they are much bigger than the grocery store, so I use 3 of those. Chicken Broth : You can use regular salted chicken broth or reduced-sodium. Keep in mind that the slow cooker tends to mute flavors because of the longer cook time, which is why I prefer to use regular chicken broth for this recipe.
