Beef Enchiladas

8 tortilas
1 tsp ground coriander
4 clove garlic, minced
1/2 cup onion, chopped
1/4 tsp pepper
2 tbsp butter
3 tbsp flour
8 oz sour cream
2 cup chicken broth
4 oz can diced green chilis
1 cup shredded monterey jack cheesec
1 1/2 pounds ground chuck, browned and drained.

Olives, tomatoes and sliced green onions for topping

Preheat oven to 350° and warm flour tortillas in microwave.

For sauce, cook onion, garlic, coriander and pepper in butter until onion is tender.

Stir flour into sour cream and add to onion mixture.

Stir in broth and chilis and cook until thick and bubbly.

Remove from heat and stir in 1/2 cup cheese.

Stir 1/2 cup sauce into beef mixture, then fill tortillas with about a 1/4 cup filling, roll, and line up in 12 x 7 x 2 inch greased baking dish.

Top with remaining sauce and bake covered for 35 minutes or til heated through.

Sprinkle with remaining cheese and then baked uncovered for 5 minutes.

Let stand for 10 minutes then top with tomatoes, olives and green onions. I alway double this recipe Voir moins
