Remove the membrane from the back of the ribs.Put a little mustard to allow the spices to better adhere to the meat, then put the dry marinade on the ribs.Marinate for two to four hours.Place the ribs on the barbecue in indirect cooking, at 225°F, for 2 to 3 hours, depending on their size.Remove the meat from the barbecue and place it in aluminum foil.

Top with brown sugar, maple syrup, honey, hot sauce, butter and whiskey.Close the aluminum foil and put everything back on the barbecue using indirect cooking, still at 225°F, for 2 hours.Remove ribs from foil and grill over low heat for about 20 minutes, turning to make sure they don’t burn. While cooking the ribs, it is important to brush them with your favorite barbecue sauce, until they are caramelized and well-sauced.
